About the Speaker
Dr. Nguyen Tien Thanh is research intersects food technology and biotechnology, focusing on two primary areas. His main direction is exploiting the potential of lactic acid bacteria (LAB). This involves isolating local strains from fermented foods to study their probiotic properties and metabolites, such as the preservative nisin. A major focus is on the enzyme beta-galactosidase for producing lactose-free products and prebiotic galacto-oligosaccharides (GOS). His work also includes developing LAB as "microbial cell factories" using a novel food-grade, antibiotic-free expression system to produce enzymes and vaccine antigens. A new research interest is utilizing LAB proteases to ferment plant-based protein-rich foods. His second direction involves valorizing food industry by-products, promoting a circular economy. This research enhances the value of distillers' grains, converts pectin-rich waste into prebiotics, and processes shrimp waste into valuable compounds.
