About the Speaker

Prof. Amber Chiou Jiachi  obtained her BSc and MSc from National Taiwan University, and Ph.D. from the Department of Food Science at Rutgers University, USA. As an independent Principal Investigator in The Hong Kong Polytechnic University, Prof. Chiou has been actively exploring the intricate relationships between food bioactive compounds, breastmilk composition, and infant gut microbiome development. One of Prof. Chiou’s research directions focuses on the structural and functional roles of probiotics and their derived metabolites from different sources including fermented foods, human milk and feces, and their impact on human health. Leveraging multidisciplinary platforms including microbiology, animal models, omics and bioinformatics, Prof. Chiou has dived into the works of pre-, pro- and synbiotics, emphasizing their beneficial effects on metabolic disorders and atopic dermatitis.
